  • 400g/14oz dried pasta

  • 150ml/¼ pint double cream

  • 1 small garlic clove, crushed, or ½ tsp garlic powder

  • 25g/1oz Parmesan (or a similar vegetarian hard cheese), finely grated, plus extra to serve

  • Salt and freshly ground black pepper

  • Bring a big pot half-filled with water to a boil, adding lots of salt along the way. Cook the pasta for 10–12 minutes, or according to the package directions, or until it is just cooked, tossing regularly, until it is just tender.
  • Just before the pasta is finished cooking, pour the double cream into a small saucepan, add the garlic, and bring to a very mild boil, stirring continuously, until the pasta is done. Stir in around 100ml/312fl oz of the pasta boiling water as well as the grated Parmesan until the cheese is melted. Season with salt and freshly ground pepper.
  • The pasta should be rinsed in a colander before being returned to the pan it was cooked in. Toss in the sauce until completely combined. Serve with more cheese on top.
