I was browsing Yummly on a Saturday when I found this easy recipe of Thai Shrimp Food. Immediately, I put my pants and shirt on and headed to the grocery store.
Thai soups are among the tastiest and spiciest in the world. They are famous for being rich in flavour.
It turned to be delicious, the combination the coconut milk which is sweet and the red curry paste is magnificent. On the side, wild rice and on my second serving, I mixed the rice inside the soup directly, and that was even better.
Recipe: Mega Tasty Thai Shrimp Soup
Ingredients:
- 1 cup basmati rice
- 2 tablespoons unsalted butter
- 1 pound medium shrimp, peeled and deveined
- Kosher salt and freshly ground black pepper, to taste
- 2 cloves garlic, minced
- 1 onion, diced
- 1 red bell pepper, diced
- 1 tablespoon freshly grated ginger
- 2 tablespoon red curry paste
- 1 (12-ounce) can unsweetened coconut milk
- 3 cups vegetable stock
- Juice of 1 lime
- 2 tablespoons chopped fresh cilantro leaves
