Here we go with another Keto recipe for your cravings. The main substitution is the pork rinds instead of breadcrumbs.

You can buy pork rinds anywhere, they are also known as chicharrones.

The Chicken is crunchy and very Keto with only a 2% of carbs

These cheesy meatballs are addictive and is also a good choice to take to work. When you heat them up the cheese will melt again

Ingredients

  • 400 gr. chicken breast (filets)

  • 150 gr. Pork rind

  • 2 eggs medium

  • 1 table spoon garlic powder

  • 1 table spoon sweet paprika

  • 1 Table spoon Garlic powder

  • 1 tea spoon chilli powder

  • 1 table spoon thyme grounded

  • 5 ml water

  • Salt

  • Pepper

Directions

  • Breading
  • Salt & pepper the chicken filets to your taste
  • Put the pork rinds (chicharrones) inside a plastic bag and smash them until they are the size of breadcrumbs
  • Add to the bag the thyme, oregano, garlic powder, paprika, chilli powder, a pinch of salt and pepper
  • Mix it very well
  • Beat 2 eggs on a plate or bowl and add 5ml of water
  • Soak the chicken fillets in egg and then coat them with the Chicharrones mix until well covered.
  • Cooking
  • In an Oven tray: Add the chicken fillets
  • Grill in the oven for 25 minutes at 205C or 400F
  • Serve immediately
