Some weeks, I make it to Wednesday without missing a beat and am looking forward to the weekend. Other weeks, the notion of two more days until Saturday makes me feel a little down in the dumps.

Lunch, on the other hand, is something that always puts a smile on my face.

Whether it’s a fast 10-minute one-pot meal or anything that helps me get my mind off of the workweek, it’s all up to me. Whatever the case, eating is my therapy.

As a devotee of boxed mac and cheese, I can only presume that you do so because you like the convenience it provides.

It is true that creating the sauce from scratch would take longer, but I can tell you that it will taste far better!

You may have the sauce ready in a couple of minutes, which is a great time-saving bonus! All you’ll need is a fast roux, some whole milk, and enough of cheese to make this dish.

Tostadas – Wednesday lunch specials

Tostadas are one of my favorite dishes to prepare since they allow you to create a variety of tasty combinations and present a full platter of delicious food.

I normally stick to a toasted tortilla and refried beans as my go-to meal. After that, I switch up the toppings.

I’ll sometimes use ground beef, but I’ll also experiment with shredded chicken or spicy sweet potatoes.

Fettuccine Alfredo (Alfredo sauce)

What could be more satisfying than a nice dish of spaghetti when you’re simply searching for something to warm you up? And fettuccine alfredo is one of the most delicious dishes available!

Did you know that the sauce may be made with just three ingredients: cream, butter, and parmesan cheese? Thank you very much!

Tacos cooked from scratch are the best

After all, what better way to lift your mood than with a plate of tacos in hand? It’s so simple to switch around the ingredients in these sandwiches, and they’re usually a hit with the crowds.

Trisha Yearwood is a well-known actress. Sloppy Joes are a kind of sandwich that is made using sloppy joes and ketchup.

Sloppy joes cooked from scratch are such a comforting nostalgia. It is also much superior to the messy camp-day sandwiches if you prepare them yourself.

This meal, like the one above, is both visually appealing and vibrant. Isn’t it true that we consume with our eyes?

A package of frozen veggies will suffice if I’m in a hurry. Simply allow them to thaw out and drain off any extra moisture before using.

Lasagne with ricotta and parmesan

A creamy ricotta bechamel sauce tops this simple lasagne bianco, which is delicious served with slow-cooked lamb or served on its own. In any case, a fresh salad should accompany the dish.

Wraps with chicken and ranch dressing

Confession: I’m one of those folks that likes to smother everything with ranch dressing. I’ll take fries, sandwiches, pizza, and whatever else you want to serve me!

As a result, these chicken wraps are one of my favorite quick weeknight dinners. The panini press or food grill can make these sandwiches in less than 10 minutes if you have one.

Don’t be afraid to use a lot of cheese! My favorite additions to mine are onion and bacon.
